Since Etsy and Bonanza are not actually sync’d, the quantity available for sale on Etsy does not get updated after selling an item on Bonanza, correct? Will it get updated if I connect my Ebay accounts? I’m curious because almost everything I sell is one each, or one of a kind.

No. You have to go into Etsy or eBay to update the listing. Bonanza does not do it automatically. They are not synced with each other in any way.
